Ingredients: 8 pieces of chicken thighs, drumsticks, or a mix. 2 cups buttermilk. 2 tablespoons hot sauce. 2 cups all-purpose flour. 1/2 cup cornstarch. 2 tablespoons paprika. 1 tablespoon cayenne pepper. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon salt. 1 teaspoon black pepper. Vegetable oil, for frying.
Instructions: In a large bowl, combine buttermilk and hot sauce. Add chicken pieces and marinate for at least 4 hours or overnight. In a separate bowl, mix together flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Remove chicken from buttermilk marinade, allowing excess to drip off. Dredge chicken pieces in the flour mixture, shaking off any excess. Heat vegetable oil in a large skillet or deep fryer to 350F 175C. Fry chicken pieces in batches, about 8-10 minutes per side or until golden brown and cooked through. Transfer fried chicken to a wire rack set over a baking sheet to drain excess oil.
