A list of cheeses that do not contain animal rennet (the site also has a list by cheese type), and are thus suitable for vegetarians and some other diets.

For those who don't know, via Wiki:

Rennet /ˈrɛnɨt/ is a complex of enzymes produced in any mammalian stomach, and is often used in the production of cheese. Rennet contains many enzymes, including a proteolytic enzyme (protease) that coagulates the milk, causing it to separate into solids (curds) and liquid (whey). They are also very important in the stomach of young mammals as they digest their mothers' milk. The active enzyme in rennet is called chymosin or rennin (EC 3.4.23.4) but there are also other important enzymes in it, e.g., pepsin and lipase. There are non-animal sources for rennet that are suitable for consumption by vegetarians.

Because rennet is produced in the stomach, it cannot be derived from animal sources except as a byproduct of the slaughter of those animals, and thus is not suitable for those trying to maintain an (ovo-)lacto vegetarian diet.

Recently inspired.

I've been inspired to become a lact-vegetarian, aka. lactarian. I feel like I owe to my body to make it healthier & better. Hopefully it'll thank me. It's gonna be hard w/o a friend who is vegan or vegetarian as well, but I'll do it :D

Spiced Lentil Tacos

Finely chop 1 cup onion and 1 clove garlic.  Rinse 1 cup dried brown lentils.  Shred 1 1/4 cups lettuce and 1/2 cup reduced fat cheddar.  Chop 1 cup tomato.  Heat 1 Tbsp. olive oil in a large skillet over medium-high heat.  Cook onion, garlic and 1/2 tsp. salt until onion begins to soften, about 3-4 minutes.  Add lentils and 1 package taco seasoning.  Cook for another minute.  Add 2 1/2 cups vegetable broth and bring to a boil.  Reduce heat, cover and simmer until lentils are tender, 25-30 minutes.  Mix 1/2 cup fat free sour cream and a little hot sauce in a bowl.  Uncover lentils and cook until mixture thickens, 6-8 minutes.  Mash.  Spoon lentil mixture into 8 taco shells.  Each taco should get about 1/4 cup lentils.  Top with 2 heaping tsp. sour cream mixture, lettuce, tomato and cheese.  Serves 4.

Gluten-free, Vegetarian Shepard's Pie

5 medium red potatoes 1 cup English peas 1 cup shredded carrots gluten-free vegetarian turkey gravy 1 1/4 cup sharp cheddar 1 package of Boca meat crumbles. 1/2 tsp rosemary Oil for cooking veggies

Preheat oven to 425

Set a large pot of water to boil. Sprinkle with sea salt. Cut potatoes into cubes, and add to water. Boil until soft, then mash or food process until they are creamy and set aside.

Shred the cheese and set aside

Saute rosemary, oil, peas, and carrots in a pan. Put them in the bottom of baking dish.

Cook the gravy, and then add in the Boca meat, and heat until softened. Add the meat on top of the veggies, followed by the potatoes, and then sprinkle with the cheese. Bake until all the edges of the cheese brown, and then let sit for 5 minutes, so that it can set. Serves about 6.
