Migas 🇲🇽
One of the things I love about this time of year is that it’s tomato season and my favorite tomatoes are these sweet orange beauties that come available in July and August. I knew right as I bought them what I was gonna make with them. Migas is a Mexican dish of scrambled eggs, tortillas, and pretty much whatever else you want to add. I first came across migas in Austin, Texas where it is a popular breakfast meal.
My take on this included homemade tortillas, a big handful of these beautiful cherry tomatoes, 1 shallot, 1 jalapeno, a bunch of salt and pepper, and some shredded monterey jack cheese to top it off.
If you’ve never made your own tortillas I HIGHLY recommend it… it’s super easy but you will need a tortilla press, some masa corn flour (I use the organic kind by Bob’s Red Mill), water, and salt. There’s a great 1-minute recipe here.
Once the tortillas are made, I break them apart and fry them in a little avocado oil until just crispy and then take them out of the pan. Sauté the veggies first until they’re soft with the tomatoes in last, then throw in the tortillas, then dump in a big nob of butter and then the eggs. It’s my favorite egg scramble ever.
