Linguine Delight with Savory Sausage Savor the rich flavors of this hearty linguine dish, featuring turkey Italian sausage and a medley of spices, perfect for a comforting meal. Ingredients 1 lb Turkey Italian Sausage, casings removed (pork can be used as a substitute) 8 oz dry whole wheat linguine 3 cups chicken broth 14 oz can fire roasted diced tomatoes (regular diced tomatoes can be substituted) 1 small onion, diced 3 cloves garlic, minced 1 tsp dried thyme 1 tsp dried rosemary 1/4 tsp red pepper flakes (1/2 tsp for extra heat) fresh parsley, for garnish 1 tsp salt 1/2 tsp pepper 1 cup shredded mozzarella cheese Instructions In a large stock pot or Dutch oven, heat on medium and brown the sausage with the diced onion and minced garlic. Add the chicken broth, fire roasted diced tomatoes, dried thyme, dried rosemary, red pepper flakes, salt, and pepper. If necessary, break the linguine noodles in half to fit into the pot. Press the noodles down to ensure they are fully submerged in the liquid. Cover the pot with a lid and bring to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes, or until the noodles reach your desired doneness. Stir occasionally to prevent the noodles from sticking to the bottom. For a thicker consistency, simmer with the lid off. When the pasta is cooked and most of the liquid has evaporated, gently stir in the shredded mozzarella cheese until well combined. Serve immediately, garnished with fresh parsley. The dish will thicken as it cools, so enjoy it warm. Adjust salt and pepper to taste as needed.
