CC and CI both have lots of recipes for roasted butternut squash. Here’s my adaptation, based on all the fresh, local produce I’ve found at the farm market and picked at the orchard. You probably can’t see the bed of black beans and pea shoots. Ready to be tossed, on top: the squash (peeled, cubed, roasted ‘til tender with olive oil, salt, and just a bit of cane sugar), radishes, cucumbers, hot chili, scallions, tomato, red cabbage, scallions, and greek feta. The light dressing is white balsamic and olive oil. Last night's roast chicken become's todays's travel food for my sweetie. Pop a tortilla into a skillet, top with grated cheddar, cover the pan and cook over med heat until cheese melts.
