Tofu noodle soup 🍲
Tofu Tikka Masala
1 (14-ounce) block extra-firm tofu, pressed and cubed
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (adjust to your spice preference)
1 (14.5-ounce) can diced tomatoes, undrained
1 (14-ounce) can full-fat coconut milk
1/2 cup vegetable broth
1/4 cup chopped fresh cilantro
Salt and black pepper to taste
For the Coconut Rice
1 cup basmati rice
1 (14-ounce) can full-fat coconut milk
1/2 cup water
1/4 teaspoon salt
Instructions
Prep the Tofu: Drain and press the tofu for at least 15 minutes. Cut into 1-inch cubes.
Marinate the Tofu (Optional): For extra flavor, marinate the tofu in a mixture of 1/4 cup plain yogurt, 1 tablespoon lemon juice, 1 teaspoon garam masala, and a pinch of salt for at least 30 minutes.
Cook the Rice
Rinse rice thoroughly. Combine rice, coconut milk, water, and salt in a medium saucepan.
Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes, or until liquid is absorbed and rice is tender.
Make the Tikka Masala Sauce:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and ginger and cook for an additional minute until fragrant.
Stir in cumin, coriander, garam masala, turmeric, and cayenne pepper, and cook for another 30 seconds.
Add diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.
Cook the Tofu
If not marinated, toss tofu with a bit of olive oil, garam masala, and salt.
In a separate skillet, heat a bit of oil and cook the tofu until golden brown on all sides.
Assemble the Tikka Masala:
Add the cooked tofu to the simmering sauce.
Season with salt and pepper to taste.
Let simmer for 5-10 minutes to allow flavors to blend.
Serve: Stir in fresh cilantro. Serve the hot Tofu Tikka Masala over a bed of fluffy coconut rice.

Tofu cubes are marinated in a savory miso glaze and baked to perfection in this tasty vegan and gluten-free version of traditional tofu dengaku.
Ingredients: 1 block extra firm tofu. 2 tablespoons miso paste. 2 tablespoons maple syrup. 1 tablespoon rice vinegar. 1 tablespoon soy sauce. 1 tablespoon water. 1 teaspoon sesame oil. 1 teaspoon grated ginger. Sesame seeds for garnish. Sliced green onions for garnish.
Instructions: Press tofu to remove excess water, then cut into cubes. In a bowl, mix miso paste, maple syrup, rice vinegar, soy sauce, water, sesame oil, and grated ginger to make the glaze. Coat tofu cubes with the glaze mixture and let marinate for at least 30 minutes. Preheat oven to 400F 200C. Place marinated tofu on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until tofu is golden brown and glazed. Garnish with sesame seeds and sliced green onions before serving.

Instructions: Preheat oven to 400F 200C. In a bowl, mix cornstarch with a pinch of salt. Toss tofu cubes in cornstarch until evenly coated. Place tofu cubes on a lined baking sheet. Bake for 25-30 minutes, flipping halfway through, until crispy and golden. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, ginger, and garlic. Drizzle sauce over crispy tofu and toss to coat evenly. Sprinkle sesame seeds over tofu. Garnish with chopped green onions. Serve hot and enjoy!

These Curried Coconut Tofu Wraps are bursting with flavor from the aromatic curry marinade and creamy coconut sauce. They're packed with protein-rich tofu and colorful veggies, making them a satisfying and delicious meal.
Ingredients: 1 block tofu, pressed and sliced. 2 tablespoons curry powder. 1 can coconut milk. 1 tablespoon soy sauce. 1 tablespoon lime juice. 1 tablespoon brown sugar. 1 tablespoon vegetable oil. 1 onion, thinly sliced. 2 cloves garlic, minced. 1 bell pepper, thinly sliced. 1 cup shredded cabbage. 4 large tortillas. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: To make the marinade, combine the curry powder, coconut milk, soy sauce, lime juice, and brown sugar in a bowl. Sliced tofu should be added to the marinade and left for at least half an hour. Vegetable oil should be heated over medium heat in a big skillet. Add the chopped garlic and onion, and saut until aromatic. Put the marinated tofu in the skillet with the marinade. Cook for about 10 minutes, or until the tofu is browned and the sauce has thickened. Cook the shredded cabbage and sliced bell pepper in the skillet for a further two to three minutes. To taste, add salt and pepper for seasoning. Use a separate skillet or microwave to reheat the tortillas. Spoon the tofu mixture onto each of the heated tortillas. Add fresh cilantro as a garnish. Serve the tortilla wraps right away after rolling them up.
