This is one of the simplest and nicest soups you will ever make I promise you. It’s called ‘Royal cheese and potato soup’. Taken from the @downtonabbey_official unofficial cook book, I made this for a dinner party last weekend. It went down a treat. All you need is two potatoes, two white onions, six cloves of garlic, six cups of chicken stock, I cup of full cream, a tea spoon of English mustard, one table spoon of butter and two cups of grated cheddar cheese. Melt the butter in the pan and add the peeled and chopped garlic and potatoes to the pan. Stir well and cook for 10 minutes on a medium heat. Add the chicken stock and bring to the boil. Simmer gently for a further 10 minutes. Remove the potato and onion and blitz into a pulp. Heat the cream in a pan and add the mustard. Add that to the blitzed potatoes and season to taste. Add the grated cheese and stir until the cheese is melted. Serve with crusty bread.
