Kale, Quinoa & Sweet Potato Bake *Vegetarian* (I love cooking in different places. This meal was made at a beautiful riverside Airbnb in New Paltz, NY!) Recipe yields 6 servings. Each serving packs 245 calories, 10 grams of Protein & just 24 grams of Carbohydrate. Prep Time: 10 minutes Cook Time: 45 minutes Ingredients: -1 Large bag of Kale (stemmed & chopped) -1 Large Sweet Potato (cut into wedges) -1 can of Black Bean (drained & rinsed) -¾ cup of uncooked Quinoa -4 Shallots (peeled & cut into thirds) -1 Lemon’s Worth of Lemon Juice -2 cloves of Garlic (minced) -¾ cup of Crumbled Feta Cheese -2 tsp Trader Joe’s Chile Lime Seasoning -2 tsp Iodized Salt -2 tsp Black Pepper -2 tsp Paprika -2 tsp Onion Powder -2 tbsp of Light Olive Oil Steps: -Rinse & dry all vegetables/legumes. -In a small pot, bring about 2 cups of water to a boil. Add your quinoa. Allow to boil for another 5 minutes. Lower heat to low-medium & allow to cook uncovered for another 15 minutes or until quinoa appears fluffy. Add black beans to the pot once your quinoa is ready, mix until fully incorporated, cover & set aside. -Preheat the oven to 425 degrees Fahrenheit. -In a small bowl, mix sweet potato wedges with a drizzle of light olive oil, chile lime seasoning, paprika, salt, pepper & onion powder. Throw in the oven on a cookie sheet at 425 degrees Fahrenheit for 20 minutes. -In another small bowl, mix shallots with a drizzle of light olive oil, a touch of salt & throw in the oven on a cookie sheet at 425 degrees Fahrenheit for about 15 minutes. -While everything’s cooking in the oven, whisk lemon juice, light olive oil & minced garlic in a small bowl. -Add this dressing to your rinsed, trimmed & stemmed kale. Throw your dressed kale on a medium sized aluminum cooking pan. Add in black beans, a sprinkle of crumbled feta cheese & quinoa. Mix all together. -Once shallots come out of the oven, add to our kale & quinoa mix. -Mix thoroughly, top with sweet potatoes & the rest of your crumbled feta cheese.
