Lemon verbena or mint ice tea, with fresh stevia
This makes a nice, light and refreshing ice tea that’s only slightly sweet. No sugar! 4-6 fresh stevia leaves 8-10 mint or lemon verbena leaves 12-16oz water Directions: Take 8oz of the water, and throw in the leaves. Heat for 2-3 minutes until steeped. HOMEMADE NEPALI CHAI TEA
This past week’s weather has been all over the place. Wednesday it was in the mid-90’s and we were all asked by the power company to conserve energy. Yesterday it was a high of 70. Seriously all over the place. But if you are having a cool day, there are few things as nice as wearing a cozy sweater or cardigan, and drinking a steaming cup of tea. I have never been a fan of Chai tea before. I have always found them just too sweet and cloying. I am not sure why I never though of it but, if you make your own, you can control the amount of sugar. So too sweet is no longer a problem! Yeah… My epiphany came while my sister was in Uganda. She had a journalism fellowship with 1000 Shillings and I was stalking their website looking for any news of her or by her. They have just opened up a program working with women in Nepal, and posted this recipe on their blog for Nepali Chai Tea. I loved it. I have made it several times experimenting with some of the ingredients but it is always tasty, and yes, I do cut back on the sugar. Now I just have to get a traditional steel cup to have a more authentic experience. Nepali Chai Tea From 1000 Shillings 1 tbsp black tea leaves (or 2 -3 tea bags) - use Darjeeling when possible 1 2/3 cups boiling water 1/2 cup heated milk 1/8-1/4 cup sugar (I often use 1 - 2 tsp cause I am like that) 2 whole cloves 3 cardamon pods, cracked open (my favorite part - smack them with the flat part of a big knife!) 1/2 cinnamon stick a grind of fresh black pepper Boil your water and steep the tea for a solid 10 minutes. We want this strong! Add the milk, sugar, and spices. Simmer for another 10 minutes to blend all the flavors together. Strain and serve it up.
