One of the aspects about #vietnamesecuisine that I love most is its unbridled deference to #freshveggies in every dish. Even herbs like basil and mint aren't treated like garnishes, and lettuce isn't just decoration on a plate. All of it is meant to be an edible part of the meal. Take this Bánh Xèo, for example. Half of the plate is consumed by greens and #pickledveggies, with the #crepe itself stuffed with really fresh bean sprouts. If not for the hint of pork, shrimp and fish sauce, a dish like this makes for a hearty #vegetarian meal on its own. Like a #salad on steroids, or a #lettucewrap like no other.
