Lunch today lentil salad!

Buy prevoiled brown lentils, rinse them with lot of water. Mix with your favorite veggies and some sauce. That's it. You can see my version on the 2nd picture.

Tipp:

toast your toast in a pan with a sprinkle Olive oil, salt and oregano

Breakfast: vegan French toast with iced matcha latte.

French toast per portion:

125mL plant milk (I used approach soy barista)

1 tbsp soy flour

1 tsp cinnamon

1 tsp vanilla extract

1 tsp sweetener of your choice (I used agave syrup)

1 tsp coconut oil

stir all the ingredients

let 3 small toast soak full

and bake it with 1 tbsp vegan batter in a pan

To garnish some fresh fruits (50g)

Matcha latte:

Put in a mixer

150mL plant milk

1 tsp sweetener of your choice

1 tsp matcha

Crushed ice

Breakfast: Strawberry smoothie -283kcal

Lunch: potatoes with steamed lentils and broccoli + sweet chili sauce -319kcal

Dinner: same as yesterday champignon-leek quiche -461kcal

Total: 1063kcal

Recipe for 4 portions:

-ready-made shortcrust pastry

Preheat the oven to 180°C. And bake for 10min.

-400g champignon

-1 leek

-2 cloves of garlic

-2tbsp Olive oil (optional)

meanwhile fry these cut ingredients in the pan for 5 minutes.

400g silken Tofu

2tbsp cornstarch

Salt

Pepper

4tbsp Nutritional yeast

Nutmeg

Blend tofu and cornstarch in a mixer until smooth. Season the mixture with salt, pepper, nutmeg and nutritional yeast.

Give all the ingredients in the shortcrust tarte and bake it for 30min.

In 11 days I have a doctor's appointment where I will be weighed. Until then, I should lose some weight, otherwise it could endanger my job. My boyfriend will be gone for 3 days from tomorrow morning, so I have time to really get going
