Local Sonic the Hedgehog comic artist confused and befuddles that Sonic the Hedgehog fans are happy when the comic actually passingly resembles the Sonic the Hedgehog video games
Because he totally doesn't have nothing but loathing and resentment in his heart against this series
I think that fundamentally, there aren't any stories that can be told with humans that cannot be told with mobians. The addition of humans would be pretty much entirely for worldbuilding consistency, namely in places populated by humans that appear in the comics (Spagonia, Westopplis, etc) or in noteworthy places in the story (Gerald Robotnik, Maria, etc)
Mobians, fundamentally, are human. They act like humans, think like humans, have human relationships, live in human societies, and have human struggles. Though, I don't think humans detract from anything, they just don't add anything either.
You could justify the existence of humans in stories by creating a distinction between humans and mobians in terms of general personalities and societies. Maybe humans are more prone to conflict or prone to organized militaries than mobians, to spitball some examples. Princess Elise was an interesting character who could not do the things Sonic can and so grew by hanging out with him, but the execution for her story is lackluster
But it wouldn't hurt anything to have them as background characters again
