Butter-Free Banana Snickerdoodles... Need I say more? This recipe is a Bay Area Homemade original. Take your favorite Snickerdoodle recipe (or just use a pre-packaged mix) - and replace the butter with mashed banana. It's that simple! In general, I found one stick of butter to be equivalent to one large banana. As with all baking, using a very ripe banana is ideal - no green, and starting to get spots. Mash well (I used a fork), and bake as normal. The result is a slightly fluffier cookie, with a hint of banana goodness. Best of all, that's half a CUP of butter completely omitted from the recipe. Oh yes - I think I will have one more!
