Low carb dinner tonight was meat-free 'meatballs' with low sugar marinara sauce and courgette pasta. Freaking good, will definitely be having this again soon. Planning to start blogging all of my meals now that I'm trying a low-carb lifestyle in the run up to my wedding. It'll motivate me to stay on track!

This is just what I need right now!
When life starts to get confusing I start watching Gilmore Girls.
True story.
chocolate muffin
180g dark chocolate
200g butter (or a cream - verified)
Stevia or honey (or sweetener you use, and can step sachet juice of your choice (it’s not the healthiest option))
2 eggs
2 tablespoons of cocoa
Melt the dark chocolate over low heat and add the butter (melt it) and if you put cream just a quick one with melted chocolate. Egg whisk with stevia (honey, sweetener … whatever you use) and add a teaspoon per teaspoon of melted chocolate, add 2 tablespoons of cocoa. Bake in molds for muffins at 250C for 7 minutes.
Cauliflower cheesy breadsticks! They’re out of this world and only about 50 calories with 3.8 carbs!

Low carb and gluten free peanut butter chocolate chip scones. So delicious! I used Lilys chocolate chips that are sweetened with stevia and used all almond flour.

recipe:
6 string cheeses
egg
1/4 c almond meal
1/4 c flax meal
italian seasoning
garlic seasoning
salt & pepper
cut the string cheese into thirds. beat egg. mix almond meal, flax meal and seasonings.
dip the string cheese into the egg, roll in the breading, and repeat to get a good crust.
heat oil in pan, be patient and let it get super hot. if you have a thermometer, around 250-260 degrees. fry for ~2 min on each side. serve with marinara/spaghetti sauce/tomato paste + water + seasonings. devour!
i think my oil did not get hot enough, which is why they broke apart, but they still tasted awesome.
