Many people in the comments are saying “trauma”, but this is actually a very normal occurrence. It’s called Childhood Amnesia, and it’s a process which, as the brain reorganizes itself for cognitive thought that is developed in late childhood, it changes the Accessibility of those memories during recall. Many childhood memories are available to the person, but they will not be remembered during regular recall activity, you have to “trick” your brain into remembering with different tactics.
This is because there are two parts to memories - their encoding and their recall. The encoding determines their availability, their recall determines their accessibility. The reason why trauma memory and childhood amnesia are different is in this distinction. Trauma memory is often encoded differently, bypassing to the limbic system where it is stored as intrinsic memory. It can’t be recalled because it was never encoded. Childhood amnesia, however, seems to indicate that the memories are encoded, but we lose access to them as we age. This is most likely due to the development of brain structures that fundamentally change our encoding and recall of memory as we get older.
This is an important distinction, because trauma memory is “stored in the body”, i.e. you get triggers that send your body into a cascade of uncontrollable feelings, sensations and reactions. Whereas childhood memories won’t generally do that, they are just recalled at odd times with odd associations.

I wonder what Eden was prior to the Quiet Rapture. Like, was it always a death cult, masquerading as normal? It was under Martian jurisdiction, and is pretty big. Cults like that don't usually hit mainstream consciousness without an active trigger event.
Personally I kind of see it being similar to Unitology in Dead Space;

Simon's reluctance to let go of his Mom as a source of comfort despite her sending him to Eden makes me think the change in her may have been sudden, or possibly grief-fueled; he remembers his Mom as she was prior to him being shipped off, which is part of why he fights so hard.
(His Mom also gifts him the knife in what looks like a forest. I personally think the knife was not initially gifted for the purpose of killing humans, but rather for its designed intention-- skinning animals. We're 350 years post colonisation at that point, I'd say Mars has wildlife.)
Much of the doctrine we hear from the Father is very much post-QR (the Last Tree, there being no remaining soil, etc) so I do think Eden as it is in present times looks very different to the pre-QR Eden, though I do think it was still a cult.
I've always reasoned that Martian culture (which is canonically patriotic) gave some foundations for cultish behavior, and there was already some beginnings of a power dynamic inside the station. Maybe the Father was already someone with a lot of charisma and social pull in the chain of command. Not all cult leaders start out to become cult leaders, after all, and isolating any community (like in a space station) would eventually turn their customs insular and highly specific to their own context.
Maybe the veneration of the Tree was already present as a sort of low-stakes localized superstition, and when the Quiet Rapture hit, it exploded as suddenly it wasn't just a point of pride to keep a whole garden alive and thriving in space. It was about possibly this being the very last Tree ever.
As for the knife, I do think it was more for self-defense and practicality. A knife can be a tool for al sorts of scenarios, there used to be a time where having a knife on you at all times was just as commonplace as a ring of keys. Passing down a good reliable knife from parent to child was also incredibly commonplace, still is in some places.
I love the idea of Simon struggling to tell Grace about his past like:
