FFXIV: Ratatouille
Life has been hectic recently, and a simple dish is what the doctor ordered. How about some Ratatouille?
I’m going to leave it up to you whether you want to slice or dice your veggies, as well as whether to peel them or not. Peeling tomatoes can be difficult, but many of the recipes I researched for this did so, and probably helped with the saucier texture of the dish.
Also, lavender-infused olive oil can be hard to find, and sometimes infusing it yourself is not an option. An alternative could be ½ tsp. of infused balsamic vinegar added in once the tomatoes begin cooking. Places like Amphora Nueva have some awesome infused olive oils and vinegar to choose from, including a lavender balsamic vinegar and herbs de provence olive oil that would work well with this recipe. (I was not paid by them for this, I just know they exist and are awesome! Mushroom and Sage is my jaaaam.~)
~Ingredients~
1 Eggplant
2 Zucchini
3-4 large ripe Tomatoes
1 small Yellow Onion
2 cloves Garlic
Spices: 1 Bay Leaf, 1 tbsp fresh Parsley, Salt and Pepper
2 tbsp. Lavender Infused Olive Oil, separated in half
Water, as needed
Prep Time: 10 - 15 min. | Cook Time: 30 - 40 min.
Serves: 4 - 8 people
~Instructions~
Step 1.) Prep your veggies: If you are not fond of the skin on eggplants and zucchini, peel them and then slice/dice them to your preference. Dice the onions and tomatoes (de-seed and peel the tomatoes to reduce the excess water and to get a better texture when cooking), and mince the garlic. Set aside.
Step 2.) In a saucepan or heavy-bottomed pot, saute the onions and garlic in the first tbsp of olive oil over high heat.
Step 3.) Add in the eggplant and lower to medium heat as the onions begin to turn translucent.
Step 4.) When the eggplant has cooked 3-5 minutes, add in the zucchini and cook another 3 -5 min. Add in the remaining tbsp. of olive oil as necessary.
Step 5.) Add in the tomatoes, Bay Leaf, Parsley, and salt and pepper to the pot. Cook for 5 - 7 minutes.
Step 6.) Consume hot as a side or main dish. Enjoy!
~Results~
Part of me wished I had kept the skin on my veggies for the coloring, but otherwise this made for a delicious dish that wasn’t too heavy. Next time I want to put it over some pasta tossed in olive oil!~

I know our Regens stack with a WHM, but our Shields overwrite each other and a SCH’s shields. And not only that, but our Regens overwrite another AST’s Regens.
Literally no reason to be in the same stance as another AST. We can’t swap in combat, either.
