There's multiple interpretations to the joke. The two most popular ones are that the "other side" is death and the chicken is a metaphorical chicken because it's committing suicide. (Of course feeling suicidal does not make you a coward.) Another explanation is that it's an anti-joke. This is because it starts off with a popular joke setup only to say something normal.

I wouldn't know why you asked that question since I can't read your mind (sadly), but I subscribe to the belief that questions are a good thing to ask! Even if you believe the answer is obvious :-).
