This beet cocktail has gone viral... why? BEETS me?! Jkjkjk we know exactly why, because it looks and sounds delicious and it comes from our baby birding friend Mr @leigh_russ! 2 ounces Aviation Gin / 1.5 ounces roasted beet juice (recipe below) / .375 ounce ginger syrup / .375 ounce honey syrup / .75 ounce fresh lemon juice. DIRECTIONS: Cut beets into quarters, toss in olive oil and roast over woodfire grill until soft. Juice beets directly after roasting. Add all ingredients to shaker tin. Fill with ice and shake hard for several seconds, strain onto fresh ice in double rocks glass, and garnish with thyme sprig.
