Anyone ever have an Easter meat pie? My family isn't Italian so this wasn't something I grew up eating, but I wish I had discovered this sooner! It's a meat pie stuffed with ricotta, eggs, salami, sopressata, prosciutto, ham, pepperoni, mozzerella, and parmesan cheese. I used Carbquik's pie crust recipe, and it came out too powdery for my taste. I'll try a different pie crust next time, or maybe even make it bottomless and only use a crust on top. Low Carb Coconut Macaroons
Ingredients:
• 3 large room temp egg whites
• 1/2 teaspoon baking powder
• pinch of salt
• 4 Tablespoons granulated erythritol (I recommend Swerve)
• 1 teaspoon vanilla extract
• 7 ounces unsweetened, dessicated coconut
Method:
1. Preheat oven to 350˚F and line a large cookie sheet with foil or parchment
2. In a large bowl, beat together the egg whites, baking powder, and salt with a hand or stand mixer on medium speed until soft peaks form. Gradually add granulated erythritol one tablespoon at a time, and continue beating on high speed until still, shiny peaks form. You should be able to stand up the meringue on the end of your beaters
3. Fold in the vanilla, then the dessicated coconut, using the edge of a rubber spatula to chop the mixture until it resembles coarse crumbs. Move on to using your hands to gather the mixture together until you can easily form it into a ball.
4. Take two heaping tablespoons of the mixture and form it into a ball with your hands. Place the formed macaroons onto the baking sheet and bake for 15 - 20 minutes, until golden brown & delicious. Let them cool completely before eating, and store leftovers in an airtight container at room temperature
You could stop there...or if you want to make the macaroons super decadent, dip them in melted sugar free chocolate 😍

Low Carb Toasted Marshmallow Meringue Cake
Ingredients:
• 3 large egg whites, left at room temperature for at least 30 minutes (1/2 cup if you’re using them from a carton)
• pinch of salt
• 2/3 cup powdered erythritol (I used Swerve confectioner’s blend)
• 1 1/2 teaspoon vanilla extract
• 1 teaspoon lemon juice
• 1 teaspoon corn starch
Method:
1. Preheat oven to 300˚. Line a cookie sheet with parchment paper and dust it with cornstarch
2. Beat egg whites and salt in until soft peaks form. Add in powdered erythritol in 5 additions, beating well after each one, continuing to beat until stiff peaks form
2. Add remaining ingredients, folding them in carefully with a rubber spatula until combined
3. Form meringue into a mound onto cookie sheet. Bake for 25 - 35 minutes or until outside is a nice toasty golden brown. Serve with fresh berries and whipped cream

How to make low carb chocolate covered strawberries: • Wash and dry berries thoroughly • Grate sugar free chocolate with a cheese grater into a microwave safe plastic bowl. Microwave in 20 second intervals until just melted & slightly thick. Do not be tempted to microwave until completely melted! • Dip berries in melted chocolate and carefully place them onto a waxed paper lined cookie sheet. If you want you can roll the berries in toasted unsweetened shredded coconut (bake at 350° for 5-10 mins to toast), they are BOMB. • Refrigerate until chocolate is set, eat within 2 days of making.
