mushroom bourguignon (or I guess beef bourguignon if you're not vegetarian) is easy enough to make but tases very good and sounds kinda fancy. it's really filling with mashed potatoes and is great for cold weather.

mushroom/beef stroganoff on egg noodles is super easy to make and also really good and perfect for cold weather. (looking at this stroganoff pics is making me nauseous rn or I'd want some of that too...)

scallion pancakes (kind of a pain in the dick to make but so so good)

black bean tacos (I don't use the green salsa though)

black bean flautas (I pack them side by side in a Pyrex dish to bake them rather than putting them on a rack though. DO NOT BROIL PYREX)
