Sorry everyone didn’t grow up in a household where their caretaker cooker or knew how to cooked. Some of us didn’t grow up in a household with fresh fruits and produce. Some of us didn’t have the money to spend on a shit ton of garlic.

Also Julia Child would be ashamed of people behaving like that. Her whole deal was just… Making cooking accessible for people. Hell, she had a whole segment devoted to “oh, nobody taught you how to cook eggs? Here’s how you do that.” A significant part of her show was basics that people take for granted (and though the equipment may have changed somewhat, its still pretty helpful). My dad had busy parents who didn’t have the time or knowhow to cook, and he learned from watching Julia Child. French cooking made easy, here’s the basics everyone assumes you know but never taught you. And ever since, he’s had a love of cooking.
Stop putting people down for not knowing basics. Everyone is a beginner at some point or another.
I grew up in a healthy-eating cooking-skilled household and I did not know that this existed.

So confit is a way of cooking things, and it does marvellous things to many things. You put stuff in oil and slow cook it. That’s confit. Garlic confit? Put it in oil and slow cook it. Chicken confit? You put it in oil and slow cook it. (side note: confit historically means to preserve by cooking at a low temperature, (which often also meant a cure prior to cooking). So Fruit confit is fruit that’s been cooked at a low temperature in a very concentrated sugar solution, not in oil. Nowadays, confit usually just means cooking slowly in oil outside the context of fruit and does not imply a curing process) Compared to deep frying, almost no moisture is lost, and the flavour is not changed via the maillard process because it doesn’t happen. There is no charring or searing done to the meat/whatever you’re confitting. For veg in general, to confit them will cause them to become ultratender, as fibers and stuff will partially break down, cell walls will collapse, but no moisture will be lost. And their flavour will mostly remain; for garlic in particular, the hot garlicky taste, the result of the allicin, which is a result of crushing or chopping the garlic, will never come out. The chemicals will break down under that amount of heat. The oil does not terribly seep into the food by the way; it’s already saturated with water, and unless that water leaves, the oil doesn’t have a place to seep into. It’s saturated already, and the result of connective tissue breaking down, or fibres breaking down, is less room for fluids. Which is why a carrot can be nice and dry, go into a hot oven, and come out floppy and moist, as the water inside can no longer be held by its inside, and available, unabsorbed water = wet. You do get a thin layer of oil coating the outside of the food. This means that confit’ing a food item is actually very close to steaming that item at a particular temperature, or cooking it sous vide; in either case, the item does not dry out and slowly reaches its final temperature.

hey op if you’re looking for a kinder movie about alan turing, you should check out breaking the code (1996). breaking the code was originally a stage play, and this is a filmed adaptation. it’s more faithful to his personality, stars derek jacobi (who was also a gay man and plays the part with so much sympathy), and it doesn’t bungle historical details for the sake of adding more drama. here’s a link to a youtube playlist where you can watch it in full

ok so recently i wanted to read a book to my niece, who just turned 7, that I thought she’d like. but it had some scary parts in it, that might be too much for her. she’s tough, but she’s sensitive too, like any kid her age.
so what did i do? I spoilered it. I said “hey this kid runs into some monsters that are gonna try to eat him, and then they chase him and it’s very suspenseful. You think that would be too scary?”
She considered it. “Do they eat him in the end?” she asked.
“No,” I said.
“Then no,” she said. And then, when we were about to hit the Big Reveal that this person who had helped him was secretly actually a man-eating monster, she lit up and was like “IS THIS WHEN IT HAPPENS” and I was like “SHH yes!” and she was like “AHH YEAH” and loved it.
I don’t think spoilers are just for kids, though. I’m now so Tired of conventional media’s endless race for The More Shocking Ending that I refuse to watch shit when I don’t know how it’s going to end. It’s not that I don’t have the emotional resilience to handle unexpected things (well, sometimes I don’t, honestly, and have no shame about that), it’s that if the unexpected thing is the “fuck you if you liked these characters ha ha ha!” plot twist, I just don’t have the time to invest in your fictional world. If you can’t respect me as an audience then I have other shit to do with my time.
Even my own writing– I dithered a bit in my latest series, which was going to hinge on a dead character being revealed to really be alive. I did my best to avoid spoilers as I was writing the thing, but now I’ve posted it and I figured, the thing to do is just to– tag it for the reveal. It’s not worth trying to be coy or people won’t know whether they want to read your shit.
I stand by my view that if knowing the twist ruins your story, your story is poorly written. Like, I appreciate that some people love the thrill of discovery, and as such, I support making sure people don’t stumble over spoilers without warning. But I’m sick and tired of stories that go “Ha, ha, tricked you!” or confuse shock value with suspense.

Back in the old days, Kenneth Branagh actually involved Tom in the process of creating Loki. He asked Tom for all the aspects that he’d wish to explore. Tom kept a scrapbook where he wrote down all his ideas. The actors of Thor met to discuss the dynamics between the characters. That’s when Tom and Rene Russo came up with the backstory of Frigga being the one who taught Loki magic, and decided that they would share a tic. After filming Thor, Tom met Joss Whedon and they spent a whole afternoon discussing Loki, and what happened to him after his suicide attempt.
And now, actors have no idea what’s going on when they’re filming and reciting their lines. It’s no wonder the films feel so soulless. It looks like Marvel completely missed the fact that Loki became so popular because the guy who played him always knew what the character was feeling and how he would be moving.
Friendly reminder that Joss Whedon sent Tom Hiddleston the entire Avengers script and Tom read the entire thing and loved it so much that he sent a gushing email back to Joss, thanking him for writing Loki as such an emotionally complex, layered character.
Just compare that level of artistic integrity and caring about the characters and the plot to the most recent shit show of the actors not even knowing what fucking movie they’re filming.
Funny thing - if your actor doesn’t know what movie they’re filming or the role they have in the plot, then their agent can’t properly negotiate for the pay they deserve for their work.
This is a rampant issue with voice acting too.

So yes, this is definitely all about money, thinly veiled as being a way to “limit spoilers” but they’re fucking themselves big time.
Haven’t we all noticed since Phase One ended that the quality of Marvel films has gone down in general? Not production value, not names and talent associated, but the actual quality? They started churning these movies out like popcorn and that’s exactly what they became: empty and forgettable by the time you leave the theater.
What’s the thing we’ve been bitching about for two years now? How TOTALLY FUCKED Steve Rogers was in Endgame. Then you hear that Chris Evans didn’t know who he was talking to in his scenes half the time, didn’t have more than 11 pages of a redacted fucking script and had no idea how the movie was even supposed to end and we WONDER why it felt like he didn’t even know he was supposed to be playing the same guy?
Fucking shit. This is directing 101 you money-grubbing fucks. Let your actors know what story they’re telling.
Loki’s rabid fan base is ENTIRELY a result of the actor playing him getting to pour so much passion into the role and know the long game so he knew how he wanted to play certain moments.
Think about how Alan Rickman was the only one who, for 90% of the time they were filming Potter, was the ONLY ONE who knew what Snape’s ending was going to be. And how he said that informed every decision he made as an actor and every scene he ever shot with Dan Radcliffe who was, precisely as he was supposed to be, confused and terrified by how much Snape resented Harry.
You can’t just tie your actors shoelaces together and expect them to keep tap dancing.
