almond butter and mixed berry compote on cinnamon raisin toast!
buffalo cauliflower “wings” with cashew sour cream:
serves 2 as an appetizer
wings:
1/2 head cauliflower
3 tbsp breadcrumbs
2 tbsp nutritional yeast
salt to taste
3 tbsp flour
1 tbsp cornstarch
water to thin
** In a bowl mix breadcrumbs and nutritional yeast and salt (to taste).
** In another bowl mix flour, cornstarch and water until a thin batter forms
** dip cauliflower pieces into mix, then breadcrumbs. place on parchment paper. put in oven at 425 degrees for 15-20 minutes.
sauce:
1 tbsp almond butter
1 tsp honey or agave/maplesyrup
soy sauce
siracha
**mix all together, add extra siracha to taste
sour cream:
- 1/4 cup cashews
1 tbsp lemon juice
salt to taste
1/4 block tofu
water to blend
** place all ingredients in blender
METHOD:
halfway through baking (at the 15 min mark) dip the wings into the sauce and place back in the oven for 10 minutes.
