Fried Tarako

First time I tried this was in some dive bar in Tokyo full of old men. Didn’t know what it was, but looked essentially like a ball sack. Not the most pleasant of views but wtvr. 

The reality of it is not a universe apart from said ballsack: cod eggs still in the fish’s pouch. If you’re willing to overlook that, which you definitely should, it’s really really delicious. Traditionally it is served marinated in chilli spiced soy sauce, but in this case I fried it in oil n coated with sesame, chilli flakes n salt n parsley, leaving the center raw and oozing.

Kimchi onigiri

Sushi rice is not difficult to make at all. Buy some sushi rice, add for one cup of rice, two of water. Bring water to a boil, then put lid on and leave for fifteen minutes on a low heat. After fifteen minutes take rice off the hob and leave to sit for a further ten. 

Add in and stir vinegar, sugar and salt to taste. Wait for it to cool before rolling into balls / moulding and wrapping in nori. 

In this case I didn’t add in the seasoning but just put in some kimchi and a few chilli flakes. Mixing it in and then into my mould.

Kimi no shoyuzuke

Soy marinated egg yolk 

Separate the yolk from the white. And bath in 2 teaspoons soy, 2 teaspoons water, a little sugar and vinegar, making sure to cover every part of the egg. Essentially the egg coagulates the longer you leave it, I like to leave it 4-5 hours so the inside is still quite runny. Obviously the longer you leave it the saltier it will taste. 

You can use this on anything. For example on top of ramen, on some coconut rice or freshly shredded daikon. Some examples here and here.

Miso hasselback potatoes 

These are really easy make, and like kinda posh. Put two chopsticks on either side of a potato and cut along it so as to make the ridges, the chopsticks stop you cutting all the way down. This helps the potato cook really nicely. 

Cover in olive oil, salt and pepper and put in the oven at 180 degrees for 45 minutes or until crispy. 

To make a miso hasselback: 

While this happens in a pot melt a some margarine (or butter if you’re not vegan) and a teaspoon of miso. Taste it to see if you need to alter the dose of miso. Then baste a couple of times for a further 10 minutes and it’s done! 

In this case I’ve topped it with caramelized sun dried tomatoes and some fresh parsley.

Then Add the broccoli florets and asparagus spears and the vegetable broth, add the seasoning and black pepper with oregano and cover for a while to cook the veggies. Add scallions, ginger, to make it more fragrant, Serve hot garnished with chopped spring onions with brown rice, if desired. Or you can have it without any carbs.
