Ingredients: 1 can 15 oz chickpeas, drained and rinsed. 2 cloves garlic, minced. 3 tablespoons olive oil. 2 tablespoons tomato paste. 1 tablespoon Italian seasoning. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup shredded mozzarella cheese. 1/4 cup diced pepperoni. 1/4 cup diced green bell pepper. 1/4 cup diced red onion. 1/4 cup sliced black olives. 2 tablespoons chopped fresh basil leaves. 2 tablespoons grated Parmesan cheese.
Instructions: Put chickpeas, garlic that has been minced, olive oil, tomato paste, Italian seasoning, salt, and black pepper in a food processor. To make it smooth and creamy, scrape down the sides of the bowl as needed. Place the hummus in a bowl for serving. Spread out the shreds of mozzarella cheese on top of the hummus. On top of the cheese layer, spread out the diced pepperoni, green bell pepper, red onion, and black olives spread out evenly. Put chopped fresh basil leaves and grated Parmesan cheese on top. For dipping, serve right away with pita bread, tortilla chips, or vegetable sticks.
