Los chiles rellenos es uno de los formatos de alimentación más relevantes de las expresiones regionales de cocina mexicana. Los hay en versiones frescos (cuaresmeños, jalapeños o poblanos) y versiones de chiles secos como pasilla, ancho, guajillo y chipotles.
Los rellenos son diversos y van desde quesos frescos, insectos, picadillos de carne de cerdo y res con múltiples sazonados dulces o salados, frijoles refritos, mariscos, guisos de pescado, y un sinfín de posibilidades que dependen de la región donde se preparan y consumen.
Las versiones casi siempre son capeadas o sin capear, y son ofrecidos en muchos casos como tacos acompañados de arroz a la mexicana o frijoles, o en formato de plato fuerte sumergidos en caldillo de jitomate que hace que el capeado se suavice ligeramente.
Esta versión en taco es de chiles poblanos pequeños (no más de 10 centímetros de largo) que fueron tatemados a fuego directo para retirarles la piel, semillas y venas. Se rellenan de una versión casera de frijoles bayos cocinados, refritos y revueltos con huevos de rancho y una pequeña porción de quesillo.
