For chocolate lovers, these Vegan Chocolate Chip Muffins are a great treat. They are soft, moist, and made from only plants!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1 tsp baking soda. 1/2 tsp baking powder. 1/2 tsp salt. 1 cup unsweetened almond milk. 1/4 cup vegetable oil. 1 tsp vanilla extract. 1/2 cup vegan chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine the flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt. In a separate bowl, whisk together the almond milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the vegan chocolate chips into the muffin batter. Fill each muffin cup about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
