A tasty and healthy casserole with enchilada, quinoa, and black bean flavors. This dish is great for a healthy family meal and is very easy to make.
Ingredients: 1 cup quinoa, rinsed and cooked. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels, frozen or fresh. 1 cup red enchilada sauce. 1 cup shredded cheese cheddar or Mexican blend. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. Fresh cilantro for garnish optional. Sour cream for serving optional.
Instructions: Preheat the oven to 375F 190C. In a large bowl, combine cooked quinoa, black beans, corn, enchilada sauce, half of the shredded cheese, cumin, chili powder, garlic powder, salt, and pepper. Mix well. Transfer the mixture to a greased baking dish and spread it evenly. Sprinkle the remaining cheese on top of the mixture. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly. Remove from the oven and let it cool for a few minutes before serving.
