Beef Mushroom Stroganoff with Brown Rice
Indulge in a creamy and flavorful Mushroom Stroganoff made healthier with Greek yogurt and whole wheat noodles. Perfect for a comforting dinner with minimal effort!
Ingredients: 1 lb sliced cremini mushrooms. 1 medium onion, diced. 3 cloves garlic, minced. 2 cups vegetable broth. 2 tablespoons Worcestershire sauce. 1 tablespoon Dijon mustard. 1 teaspoon dried thyme. Salt and pepper to taste. 1 cup plain Greek yogurt. 8 oz cooked whole wheat egg noodles. 2 tablespoons chopped fresh parsley.
Instructions: Put the garlic, mushrooms, onion, vegetable broth, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper in a slow cooker. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the mushrooms are soft. Add the Greek yogurt and mix it in well. Place on top of cooked whole wheat egg noodles and sprinkle with fresh parsley.

Ingredients: 2 cups sliced mushrooms. 1 onion, chopped. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon soy sauce. 1 tablespoon balsamic vinegar. 1 tablespoon tomato paste. 1 can 14 oz coconut milk. 2 tablespoons all-purpose flour. 1 cup vegetable broth. Salt and pepper to taste. 8 oz fettuccine pasta, cooked according to package instructions. Fresh parsley, for garnish.
Instructions: In a large skillet, heat olive oil over medium heat. Add onions and garlic, saut until onions are translucent. Add mushrooms and cook until they release their moisture and become tender. Stir in soy sauce, balsamic vinegar, and tomato paste, cook for another 2 minutes. Sprinkle flour over the mushroom mixture, stir to combine. Slowly pour in coconut milk and vegetable broth, stirring continuously until the sauce thickens. Season with salt and pepper to taste. Simmer for 5-7 minutes until the sauce reaches desired consistency. Serve over cooked fettuccine pasta, garnished with fresh parsley.

Mushroom stroganoff revamped 🍄🍚 Ingredients • 700g mushrooms, sliced • 4 cloves garlic, minced • 1 onion, finely diced • 1-2 tbsp smoked paprika • 1 cup vegetable stock • 1/2 cup coconut yoghurt, plus extra to serve • salt and pepper, to taste • 1/2 cup uncooked brown rice • 1/2 cup uncooked quinoa • handful parsley, chopped Method 1. Boil a pot of salted water and add the quinoa and brown rice. 2. Meanwhile, heat a medium saucepan over medium heat and add in the onions and garlic and saute until soft. Next add in the mushrooms and cook for 5 mins. 3. Pour in the stock and add 1 tbsp of the smoked paprika. Simmer until the mushrooms are soft and liquid has reduced and thickened to a sauce. 4. Taste the sauce and add more smoked paprika to taste as well as salt and pepper. Stir through the coconut yoghurt. 5. Drain the brown rice and quinoa and divide into bowls. Spoon over the mushroom stroganoff and top with a dollop of coconut yoghurt and fresh parsley.
