Scallion Oil Noodles, or Cong You Ban Mian, are a simple but tasty dish made with fresh noodles covered in a fragrant scallion oil sauce. It's easy and quick to make this recipe, which makes a great meal any time of the day.
Ingredients: 200g fresh noodles. 4 tablespoons vegetable oil. 1 cup chopped scallions. 2 teaspoons light soy sauce. 1 teaspoon dark soy sauce. 1/2 teaspoon sugar. 1/4 teaspoon salt. 1/4 teaspoon white pepper.
Instructions: Cook noodles according to package instructions, then drain and set aside. Heat vegetable oil in a small saucepan until just smoking. Add scallions, and cook until fragrant and slightly browned, about 1 minute. Remove from heat and stir in light soy sauce, dark soy sauce, sugar, salt, and white pepper. Pour scallion oil mixture over cooked noodles and toss to combine. Serve hot and enjoy!
