Busy days and low on ingredients mean getting inventive to eat on the run especially when you have a guest. . . Today I made Bam and I a Chinese inspired fried noodle omelette. I have to admit I really need a new wok this year this is much better made in one but beggars can’t be choosers and I made this in our one good fry pan. . . When I’m thinking more about this I add all kinds of this like mushrooms and onions and other veg. Last night's dinner, because it was too good not to share and this is the only way I can do that these days. As most of you are probably aware Pennsylvania has been under a stay at home order since 8pm last night. Hopefully it will slow the spread and allow our healthcare workers to keep up and stay safe themselves. I'm so grateful to all of you in healthcare and I do mean all of you from the people who scrub the floors all the way to the doctors and nurses. Thank you from the bottom of my heart. Anyway. For dinner we had pot roast and gravy with buttered baby peas, sour cream mashed potatoes from my garden, and homemade buttermilk biscuits made from scratch, of course. For dessert I made bread pudding with my homemade bread. I added pecans, raisins and a ridiculous amount of butter. Served with vanilla ice cream because why not? It was pretty darn good if I do say so myself (and I do). I have enough leftovers to get me through the rest of the week. Yay. Oh and this was a pantry meal, except for the meat which came from my freezer. Happy Thursday my friends. Please stay home, stay calm, and stay safe. This can't last forever now go wash your hands and maybe use some hand sanitizer. Happy #humpday chicken fajitas! 🐔 This was a joint effort between myself and @mrsrevolutionbbq . She sautéed Onions, Bell Pepper, Padilla Pepper, Garlic and Mushrooms with a little bit of lime and soy sauce (trust me this makes the dish )until beautifully tender. ❤️ I made up the chicken with some cumin, garlic, salt, pepper, lime juice and finished it off with a shot of @espolontequila (and maybe one for myself) 🎉 We served these up family style and dug in. 🔥 And before you ask, yes we were watching The Great British Baking Show. 🎂 Hope everyone is safe and staying healthy. 😍⠀ .⠀ .⠀ .⠀ #powertothepig #chicken #fajitas #cooking #cookingismypassion #doingourpartco #quarantineandchill #mexicanfood #vegetables #familystyle #ilovetocook #pantrymeals
