Does this week not feel like the longest week ever? I can't believe it's only Wednesday!😅 If you've been watching my IG stories, you know that I've been making a lot of really easy meals lately. Salads, pasta, smoothies, etc. Because, to be honest, I have not been feeling awesome or motivated the last couple of weeks - mostly just stressed out.😔 I'm sure many of you can relate.
That being said, I whipped up some white bean rosemary hummus for my dinner today, which included cooked quinoa, lots of mixed greens, air-fried radishes, tomatoes, and green onions.🙌 Delicious and easy!
