These raw vegan mint chocolate power bars are full of flavor and good for you nutrients, so they're great as a snack or dessert to give you energy. They're simple to make and don't need to be baked!
Ingredients: 1 cup dates, pitted. 1 cup almonds. 1/2 cup rolled oats. 1/4 cup cocoa powder. 1/4 cup shredded coconut. 1/4 cup fresh mint leaves. 1/4 teaspoon peppermint extract. Pinch of salt. 1/4 cup vegan chocolate chips.
Instructions: In a food processor, blend dates, almonds, oats, cocoa powder, shredded coconut, fresh mint leaves, peppermint extract, and salt until a sticky dough forms. Line a baking dish with parchment paper and press the dough evenly into it. Sprinkle vegan chocolate chips on top and press them gently into the dough. Refrigerate for at least 2 hours or until firm. Once firm, cut into bars or squares and enjoy!
