Vanilla an Cinnamon Glazed Lucuma PRONUT’S
Makes 12
Ingredients
1/4 cup gluten free oat flour
3/4 cup coconut flour
1/4 cup pure maple syrup 1 tsp vanilla extract 2 scoops unsweetened vanilla hemp protein 2 tsp Lucuma powder
1/2 Tbsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
2 flax/ chia eggs (2 tbsp flax/chia with 16 Tbsp water, left to set)
3/4 cup unsweetened almond milk Glaze: 1/2 scoop unsweetened vanilla hemp protein
Almond milk (add in slowly and whisk until a sticky glaze consistency) Extra cinnamon for dusting
Method
Preheat the oven to 180C. Lightly grease a doughnut pan with a little coconut oil and set aside. In a large mixing bowl, sift in the coconut flour, oat flour, baking powder, baking soda, cinnamon, lucuma and protein powder. Mix together thoroughly. For the liquids, whisk together the flax/chia eggs, vanilla extract and maple syrup and pour add into the dry mixture. Add the almond milk gradually until a thick mixture forms. Divide the mixture between the 12 doughnut holes, fill to just below the top, and bake in the oven for 15 minutes, or until they a re golden. Allow the doughnuts to cool.
Prepare your glaze by whisking the ingredients together in a shallow bowl. Dip/ roll each doughnut in the glaze and place on a tray for the glaze to set. Dust with a little added cinnamon and serve.
First time making #pronuts ...not too shabby. Topped with @nutsnmore toffee crunch and white chocolate...and an Oreo mix! 💁🏽
