Summer Pasta Salad
Very fresh and filling
1 box of pasta shells
1 zucchini
1 avocado
1 lemon
1 red bell pepper
1 can of corn (or use 2 fresh ears of corn)
1/2 of a bundle of kale
1/4 cup of olive oil
salt
pepper
Optional: cilantro
Cook your shells according to instructions on the box. Cut up your zucchini, bell pepper, and avocado. Throw those veggies in a big bowl along with the corn, olive oil, lemon, and salt and pepper (to taste). Once the shells are close to being fulling cooked, throw your washed kale in the pot to let it wilt a little. Once noodles are cooked, put them and the kale into a strainer then transfer to your big bowl. Mix everything up and enjoy!
Fast + healthy lunch = lettuce boats filled with veggies and protein and a dressing. For this: shredded carrots, diced cucumber, avocado, diced Black Forest ham, and Japanese miso dressing (I like this one)
