I didn't know if I would ever feel full today. These past 2 days have felt like torture! I know my main issue is a lack in good ol' H2O but man I could've had everything in the fridge and still been hungry! So tonight Mai and I went for roasted veggie fajitas and Mannnnnnnnnn I am so full! So I guess my advice to new vegans is drink lots of water and stick with it 🌱
Vegan Week 2
So here I am feeling better than ever! This last week was odd but good. I started school again this week, and my kids have been crazy already. It is only the second day, these kids should still be shy and quiet. HAH JOKES ON ME! But let me tell you how GOOD i feel even with dealing with some rude children.
From last Tuesday to now I have made 3 new recipes and ate out a few times. MY favorite creation has been a pot pie. I didn’t follow the recipe very well but the outcome was the best thing possible. I would definitely recommend it to anyone who is just trying out a vegan lifestyle.
The first thing Mai and I ate were grilled veggie boats. We bought peppers, onion, mushrooms, pineapple, jalapenos and grilled all of them in aluminium outside in 20 degree weather. We made elote and had corn tortillas. The veggie tacos were marinated with cooking spices and charred marks from the grill. Best thing ever when you add some salsa verde. I’m hungry thinking about it now
The second I made that was a huge hit with Mai was “crab” cakes that are made with garbanzo beans and hearts of palm. He ate all 12 of the cakes in 2 days. Now in his defense, I did burn a solid amount of them and he ate them so I wouldn’t feel bad. He is the sweetest.
The last thing we made that was and is the best snack ever is VEGAN CHASCAS! OMG Just Mayo from WalMart is seriously just the best thing ever. I ate an entire pan of corn with mayo and chile. I am tempted to make it every day but I don’t want to over do it.. Ehh I don’t think people just get tired of chascas.
So today I have tofu stir fry and rice waiting for me when I get home in a few hours, and I am so excited to eat. I have been extra hungry lately, however. I don’t know if it is because of the change of diet, my back to school schedule, or just a monthly cause, but it is making me pretty hangry at 5 o’clock. I was so hungry after school yesterday, I went to WalMart and ate a significant amount of chips while grocery shopping. I need to upgrade my water consumption.
Overall this week has been great. My students know I’m vegan and they are the cutest. One kid asked me today if being vegan is making me happier. Then he asked how much coffee I’ve had today, LOL. My grocery cost was low for the week and I’m starting to finally feel the change in my body. I am definitely not as exhausted as I was last semester after the first few days of school. I cannot wait to see how these next weeks turn out. Wish my luck, vegan friends!
