Mofongo, the holy grail of Puerto Rican food (in my opinion). Mashed plantains with an array of veggies! YUM 😋 Most mofongo is made with meat and stock so be sure to specify vegetable stock. One thing I learned on our trip is that @happycow is an absolute necessity. It’s great when those hunger pains hit suddenly, but you’re not totally familiar with the area. We found @elgrifopr on Happy Cow and were super excited to give it a try. Our trip took us a bit outside of San Juan to Caguas! Just. Ask. (Nicely) It may seem scary, but most places are willing to work with your dietary needs if they know in advance. We went zip lining and cave rappelling with @ecoquestadventures (SUPER fun btw) and the package came with lunch. We mentioned our preferences on the initial forms and they made sure they had food for us. Simple as that. In fact, our entire group wound up being either vegan or vegetarian!
