Ingredients: 2 medium zucchinis, grated. 1 cup grated cheddar cheese. 1/2 cup self-raising flour. 4 eggs. 1/4 cup olive oil. 1 onion, finely chopped. 1 red bell pepper, diced. Salt and pepper to taste. 1/2 teaspoon dried oregano. 1/2 teaspoon dried basil. 1/4 teaspoon garlic powder.
Instructions: Warm your oven up to 350F 182C and grease a baking dish. Grate the zucchini, add the cheddar cheese, self-raising flour, and chopped onion to a large bowl. Add the eggs, olive oil, diced red bell pepper, salt, pepper, dried oregano, dried basil, and garlic powder to a different bowl and mix them together using a whisk. Add the egg mixture to the zucchini mix and mix it well with a spoon. Put the mix into the baking dish that has been greased and spread it out evenly. The slice should be baked in a hot oven for 30 to 35 minutes, or until it is golden brown and set. Take it out of the oven and let it cool a bit before cutting it into wedges or squares.
