My perfect mashed potatoes
The secret is in the water; literally, it’s IN the water.
See, when you boil potatoes, a lot of special starches and sugars and stuff leeches out into the water. When you drain the water before mashing them, you throw away a lot of good stuff, which is a big part of what makes mashed potatoes “dry” and bland, even when you add large amounts of cream and butter and things.
So don’t throw out any water.
Here’s how you do that:
First, cut your potatoes into smaller cubes than you probably do. (I’ve left the skins on for flavor and also, that’s where a lot of a potato’s nutrients are, like protien and iron and vitamins B and C, just to name a few)
The reason for cutting them smaller (besides avoiding giant peices of skin) is so that there is less space in the pot between each peice for water to fill, so you use less water to cook them. That’s important because you won’t be draining any water, so you can’t afford to have too much water! For the same reason, just barely cover them with water when they go on the stove.
But! Before you do that, put the pot on the stove with some butter, garlic, and seasonings; let the butter start to sizxle just a little then put most of a single layer of potatoes in the pan and let the brown and sear. Turn them, brown them on all sides, get ‘em fairly dark (I forgot to get a pic here because I was worried I’d burn the butter).
Ready? now throw the rest of the potatoes in right on top, and add your water, give them a stir. This way, you’re boiling in some of that lovely fried potato/french fry flavor.
Okay, so, as they cook, you may need to add a little water, not too much! ideally the very highest piece of potato will be poking just above the surface. Now, when your potatoes are really really soft, mash them directly into the water. Just pull them off the stove, leave all the water in, and start mashing. Trust me. At first you’ll think there’s too much water. If you get them mashed and they ARE a little too liquidy, just put ‘em back on the stove. You’ll have to stir often or constantly, but they will steam off additional water without losing any good stuff.
Now add some salt, and taste. Right?! And you haven’t even put in any cream or cheese or anything yet.
Speaking of which, you can use like, a third of the amount of butter or cream or anything, and they will still taste better than usual. So they taste better AND they are higher in nutrients AND lower in fats and salts! That’s a lot of win — enjoy your potatoes!

There is so much story telling here. A person got this pacific parrotlet named it Bruce which in and of itself is amazing but then this person went here my little bird friend a raspbebe for you to enjoy and Bruce said hell yeah and went cataclysmicly and irreversible ape shit ham on that berry. And that probably happened more than once. So instead of never again allowing this little dinosaur the joy of the succulent flesh of the delectable raspberry they went what can we do for our little baby boy. and then boom they got some kind of cake cover type deal and cut a door into it so that Bruce would Not Be Trapped in a fruit prison (altho truely it is the berries who are trapped in there with Bruce but none the less) and so he may go to his pent house and freak it as crazily as his little bird heart desires.
Anyway i love pets they are each distinct little guys who are carred for by the funniest ape to ever exist bc we love animal so much

i think one of my fave shark facts is this thing that some species of sharks do where they sorta peek their heads out of the water to see whats above the surface…..its called spyhopping and great white sharks do it all the time

#dont they reckon they learned this from whales?#bc whales have been doing this for as long as weve been observing them but sharks have only started doing it in the last decade or so#OH HEY THAT REMINDS ME#ON THE TOPIC OF SHARKS LEARNING THINGS FROM OTHER SPECIES#theres a pod of orcas that have recently started hunting sharks off the coast of south africa#started with one orca with a collapsed dorsal who reportedly HATES sharks and was the only orca on record to hunt them routinely#WELL#he taught his buddies and now theres a whole pod that hunt them#and the sharks (who arent used to being predated by anything) USED THE SAME EVASION TECHNIQUES THAT THEIR OWN PREY USE WITH THEM#so seals and turtles and etc will try to evade a GWS by swimming in a tight circle and keeping the shark in their line of sight#the GW has a larger turning circle than the prey so if the turtle/seal/whatever is able to got into the right position then they can evade#the shark. well the orcas started hunting the sharks and the sharks TRIED EMPLOYING THE SAME TACTIC THAT THEIR PREY USES#this is huge in terms of lateral learning bc its not as though the sharks have an instinctive orca evasion technique bc if they did it#would be something different. given that sharks are solitary hunters but orcas are pack hunters and the smaller turning circle method#will only work with a solitary hunter and definitely HAS NOT worked when applied to pack hunters. UPS has reached an agreement with the Teamsters union to equip its iconic brown delivery trucks with air conditioning for the first time for new units.
The agreement, announced by UPS on Tuesday, comes as the delivery giant and the International Brotherhood of Teamsters negotiate the terms of a new contract for more than 330,000 U.S. employees. (source)

Yeah it’s a huge win. Those trucks are death traps on a good day. A bunch of drivers died and more got severely ill last year from heat stroke. The temperature in the back of those vans is usually 10 degrees hotter than outside. It’s terrible, and I’m so proud of my union for how harshly they’re negotiating right now. We’ve got a bunch of smaller consessions already but this one was big.
This round of negotiations is difficult. The UPS Overlords are trying very hard to keep their billions of dollars in three pockets instead of spreading the wealth we (the workers) earned for them during the pandemic’s influx of home delivery. They’re trying to give us as little as possible and spinning the news articles to make it look like they’re super generous. Meanwhile almost everyone in my warehouse is on food stamps cuz we aren’t paid shit.
The UPS Teamsters Union are currently voting on whether or not to go on strike in August, so prepare for that. Stock up on essential supplies, just in case. We’ll let everyone know how to support us when the time comes.
This job is my first time being part of a union and I never wanna go back to not having one. It’s amazing to have so much fighting power.
