This recipe for almond-crusted chicken is a healthy take on a classic dish. The crunchy almond coating gives the juicy chicken breasts more flavor and texture.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup almond flour. 1/2 cup finely chopped almonds. 1 teaspoon garlic powder. 1 teaspoon paprika. Salt and pepper to taste. 2 eggs, beaten. 2 tablespoons olive oil.
Instructions: Preheat oven to 400F 200C. In a shallow dish, mix almond flour, chopped almonds, garlic powder, paprika, salt, and pepper. Dip each chicken breast in beaten eggs, then coat with the almond mixture, pressing gently to adhere. Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken breasts and cook until golden brown on each side, about 2-3 minutes per side. Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and almond crust is crispy. Serve hot and enjoy!
