Poor things? They're fine. This is like a baby in a car seat. The sheep are not in pain, they are not overly uncomfortable, they are not unusually scared. They probably are a bit annoyed. But this setup isn't hurting them or straining their bodies in any way. It's shaped specifically to hold their limbs out of the way without hurting their back, hips or shoulders. It's 'plastic cone on a cat with stitches' level of inconvenient, for a handful of seconds, and it's certainly much safer and easier than the other method (trying to restrain the lamb on the ground with your arms and knees while carefully giving it a delicate vaccination).

Wrestling down an animal to do whatever you NEED to do with them is not only very hard to do (and with bigger animals fucking impossible), but also very stressful for the animal. Having a simple method with the help of solid materials that keep them trapped for a while whilst we do what we gotta do is much more convenient, much less stressful, and MUCH faster! Stuff like this allows a few people to handle a large herd of sheep in abouts a day, instead of going at it for something like a week (depending on herd size, how much the sheep like people, and how experienced they are), which throws off the animals' schedule severely and stresses them out on the longer term too.

THIS is the better way.

Also, if you're worried about these sheep being on their back for a while, don't be. These people are clearly experienced, the sheep aren't that way for long, and they're turned back the way they were turned. They're fine, but it IS true that sheep can die from lying on their back, and being turned back from it wrong.
