Mediterranean Bowl Part of Trader Joe’s easy meal ideas. 1.Saute the Cruciferous Crunch with little oil. Season with Zaatar seasoning. 2. Prepare Falafel. I used Appe pan ( Aebleskiver Pan ) ..so need very little oil to make crispy Falafel. Much better than store bought deep fried ones. 3. Cut cucumber, grape tomatoes and some fruit. Apple or orange add a good surprise taste. 4. Mix some yogurt ( use plant based to keepitvegan), Tahini Sauce, salt and pepper and Harrisa ( or any other hot sauce) 6. Layer the bowl with Cruciferous Crunch as a base, portion out cucumber and other chopped veggies and fruit. Add Falafel. Drizzle the yogurt tahini dressing. Serve with freshly squeezed lemon juice on top. All done in 30 minutes with just 3 pans to clean. Cost under $10 for 4 generous servings. Protein rich, complex carbs, fiber rich and nutrients dense bowl that keeps you satisfied for few hours.
