White Chocolate Cranberry Raisin Oatmeal Cookies These soft and decadent cookies are stuffed with walnuts and almonds, as well as yummy white chocolate. Note the rum in the recipe, it helps to enhance the flavor. This twist on the classic oatmeal raisin cookie is a treat that will make the Cookie Monster jealous - and it's just in time for the holidays. It will definitely get you prime real estate on Santa's nice list. Ingredients: 3/4 c unsalted butter 1/4 c shortening 1 3/4 c dark brown sugar, tightly packed 1/2 tsp baking soda 1 tsp baking powder 1 tsp cinnamon 1/2 tsp ground ginger 1/4 tsp ground allspice 1/2 tsp salt 1 tbsp vanilla 1 tbsp rum 2 large eggs 3 tbsp spiced orange apple cider 1 c dried cranberries 1 c golden raisins 1/2 c walnuts, chopped 1/2 c almonds, chopped 1 c white chocolate chips 2 c whole wheat flour 3 c oatmeal How to make them: 1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside. 2. In the bowl of an electric mixer, combine butter, shortening, baking soda and powder, spices, vanilla and rum and beat on medium-high speed until smooth. 3. Add eggs and cider, mixing well. 4. Add in the remaining ingredients and beat on medium speed until well combined. 5. Drop medium balls of cookie dough onto parchment-lined cookie sheets, keeping them about 2 inches apart. 6. Bake for 12 minutes until just set on top. Remove from oven and cool on a rack or the cookie sheet.
