This is literally not new. This is just how spellcheck stuff has worked for a while. You're probably more used to how this tech looks on your phone- for example it learns what words you use more often so the suggestions and autocorrect are more likely to be correct for YOU. Notice in the first image here how it literally says the data is stored locally and Microsoft doesn't collect it.
By all means, turn it off if you want to. It's probably less useful on the computer than on the phone because you probably type more precisely than you swipe (if you use the key swiping tech on your phone). But, this post is somewhat misleading on the nature of this tech. It's worth being clear that this is not Microsoft collecting your data to train their LLM. This is just personalized spell check, and it's been like that for a long time, and it's always been "AI" but it's not the same type of AI as LLMs.

yeah the guy who invented them made incredibly precise infusion pumps (as opposed to gravity fed ivs) which not only meant they could give medications to teeny tiny babies safely, it's also used for insulin pumps and portable dialysis machines. the key element is that it's a peristaltic pump so the liquid stays in sterile tubing for safety
