Rhubarb & Orange Crumble cake
Crumble cake is one of my most favorite sweet treats and I have always wanted to use rhubarb for crumble cake recently.
Actually I had never tried rhubarb until this time. The appearance is kind of awkward ( in my opinion ) and I could not imagine the taste of this fruit... or vegetable...? (Rhubarb is botanically vegetable. Believe me, I googled.)
Let me say the conclusion first, the rhubarb tastes soooooo good. It’s a little bit sour but the sourness matches the sweetness of crumble cake very much.
[ Ingredients]
160 grams of rhubarb
100 grams of all purpose flour
1 tsp of baking powder
80 grams of low sugar
50 grams of butter
2 eggs
100 grams of sour cream
40 grams of chopped orange peel
●70 grams of all purpose flour
●20 grams of oats
●40 grams of butter
●3 tbsp of low sugar
[Instruction]
1. Combine all of ● with your hand and make crumbs in a bowl. Store it in the fridge.
2. Cut rhubarb into 1 cm length.
3. Mix the butter with sugar until it becomes creamy in the new bowl. When the color gets lighten, add lightly egg a little by little and mix well each time.
4. Add sour cream and orange peel and mix well. Sprinkle flour and baking powder in the same bowl and mix it.
5. Add rhubarb and mix until moistened and distribute it to the baking pan.
6. Preheat the oven to 180℃
7. Sprinkle the crumbs which you have store in the fridge on the dough.
8. Bake it in the oven for 35 - 40 minutes.
9. After finishing the baking, store it in the cold place. When it gets cold enough, cut and divide into the pieces.
