How much does Jack know about his crew's lives?

// Jack's not a very attentive sort to his crew. It's one of the reasons Barbossa was able to encourage a mutiny. He pays attention to things that he finds useful, interesting, or especially annoying. He pays some attention to what he's told by people he admires or fancies. Otherwise, he's generally uninterested.
Gibbs is a little different in that he's been there so many years that some of his facts can't help but be absorbed into Jack's brain. Jack also cares a lot about Gibbs, so he picks up more than he lets on.
Regarding an AU with Liz being Gibbs' niece, I'd probably need to do a hefty rewrite of his behaviour toward her and around Gibbs. I don't think he'd be quite so brazenly flirtatious with her, at least not with Gibbs present, and Gibbs would certainly have got more in the way between them. He loves Jack but he knows what the man's like and if Liz were his niece I think Gibbs would be highly protective and browbeat Jack into keeping his distance, captain or no.
Jack would probably joke about Liz being too pretty to be related to Joshamee. It's possible he'd flirt with her worse purely with trying not to and try to see her in secret.

Hard to believe he was gone. Jack was accustomed to the chaos of his lifestyle, the knowledge that any one of his peers could die on any given day. He was never going to be ready to lose Joshamee. For an older man, he had always seemed ageless to Jack, who had known him from being a boy of eight until what would have been doddering old seventies. Except Jack had cheated death once again and been rejuvenated by his time in the Sea of Thieves. Gibbs had claimed some benefit, but not as much has his captain.
Time and again Jack called out an instruction to Gibbs, only to realise he was no longer there. Anamaria was a fine replacement, but she did not allow for his well-meant bullying and she was not the uncle he had seen in her predecessor. It would be a while before the shine would return to Captain Sparrow, his mood soured with grief, with anger vented at walls and old ghosts.
How could he ever have admitted how much Gibbs meant to him? Each helping one another out of scrapes throughout the years. Someone he could love for his loyalty and kindness, even when he could be too soft. Someone who could encourage him to keep being the man he was and not to stray down the paths other pirates did. Someone to impress and to tell of his legacy. Uncle Gibbs, Uncle Gibbs, look what I did, look what I found, guess what happened to me?
Jack toasted the empty cabin and took another sizeable gulp of rum.
Death took what it could and gave nothing back.
Well, rarely, anyway.
