This past week has been comfortably busy. I went back to the clinic to see the nurse and dietitian and have a small nutrition class.There were 9 others there, and we all had surgery around the same day! They taught us what to eat now - which is soft solids for the rest of your life. How to eat it, how to cook it. It was very informative. Essentially this will be a lower carb diet that I will be eating. Everyday I am learning what I can tolerate.
For example, I made chicken in the crock pot yesterday. I put in a jar of salsa, 2 breasts and let it cook on low for 6 hours. And tada, salsa chicken. The two chicken breasts could have fed me for about 4-5 meals or more! It was so tender and delicious. Then, I pulled out the chicken, shredded it into small pieces, and made a chili out of the leftover salsa. I added one can of low sodium pasta sauce, pinto beans, kidney beans, and put all of that in pot.I added some spices, and then when it was done, I re-added the chicken. I just loved this, and it gave me so much protein. I got the Salsa Chicken idea from Pinterest.
For lunch, I had shrimp and broccoli. So far, out of the meats I have tried, I have been able to tolerate them all, and chicken/turkey seems to be the best ones and best tasting. I have only had dumping syndrome once, and that was the other day because I ate my tuna (and one crackr) too fast at lunch, and the contents from my pouch said bye-bye into my intestine, and I was fatigue and feeling full for over an hour!
I am doing well. I feel I am almost all healed up, and I am drinking two protien shakes a day inbetween all of my meals and am on track with my vitamins. The clinic told me to take more vitamins, but thats okay, I fit it into my schedule where I can. You know, I don’t lead a very busy life, and it’s summer, I have all of the time in the world to perfect a routine.
I crush all of the medications 3x a day, take a multivitamin 2x a day, take calcium citrate 3x a day, and vitamin D 2 drops 3x a day/1000IU. All of my meds right now, are chewable, liquids or crushed, as subscribed by the clinic for now. Thankful some of them are liquid or I’d never get them all in!
Feels like there is so much to do in a day and I feel like I run out of time. By the time 9pm rolls around, I am just exhausted!
And then, on top of everything, I have to try to get 64oz of water in/day! I try to drink as much as possible, lots of water and lots of peppermint tea! Peppermint tea is my new favourite. SHH, who needs caffiene?! We don’t know her!
I am off to a BBQ later today, and going to bring my chili with me! Looking forward to seeing my friends, I am sure they will be excited to see me eating real food now!
