Following a paleo lifestyle can be challenging, especially when it comes to $$$. I eat paleo when I can, but stick to a budget. With my Dietetics background, I also recognize the benefits of some non-paleo foods (like non-fat dairy) & let those foods sneak their way into some recipes :) plus I love wine...and rum...and whiskey...

Lime Jerk Chicken (marinade recipe previously posted below) over romaine lettuce, purple cabbage, and carrots with a lovely #paleo Honey Ginger Dressing. It might sound like a weird combo, but man was this good! For the dressing: - 2 Tbsp Sesame Oil - 1 1/2 Tbsp Apple Cider Vinegar (coconut vinegar would probably be better, but I didn't have any) - 1 1/2 Tbsp Coconut Aminos - 1 1/2 Tbsp Honey - 1/4 cup Olive Oil or avaocado oil - 1-2 Tbsp Ginger (I used 2, but it depends how much you love ginger. I love ginger. Not gingers) - 1 Garlic Clove Blend all ingredients in blender or food processor. I chilled for a little bit after blending, but you can skip all that and just cover your food in this goodness immediately.

So I wrote this whole long post about these gorgeous pictures, then accidentally hit the "back" button and lost it all. So here we go again. I came home yesterday evening to my hubs taking a little cat nap, so I decided to do some more meal prepping. I made easy stuff, so it didn't take long at all. First I preheated my oven to 400F. This was to cook the Peppered Turkey Bacon. While I was waiting for the oven to heat up, I lined a baking sheet with foil and spread a tiny bit of melted coconut oil on it. Then I slapped on strips of turkey bacon and sprinkled some cracked black pepper on top and set aside. Then I started making the easiest pancakes ever. And they are #Paleo. I just mashed 2 bananas and 3 large eggs (or 4 smaller eggs) together with a fork in a bowl. You can also use a blender or food processor, but I was way too lazy for all that. You can also add cinnamon and vanilla extract for more flavor, but I knew I would be smothering these in almond butter anyway so I didn't. Also, I was lazy. Then I just fried the batter up like normal pancakes. I heated a skillet on Medium to Medium-Low and melted some coconut oil. Then poured batter into coins and flipped when they started to bubble. Easy day. By this time, my oven had preheated so I popped my turkey bacon in and set the timer for 13 minutes, then flipped and baked for another 3-4 minutes. The bacon was not quite cooked to the crispiness that I like, but I took it out anyway because I knew they would get crispy when I re-heat them later on. I have made the mistake of cooking them all the way during meal prep, then ending up with nasty burnt bacon when I heated it up later. Yuck. When I took the bacon out of the oven, I placed them on a paper towel, then when they were cooled, put 'em in the fridge. My husband had already grilled some chicken for the week, so I decided to steam some broccoli to go with it. While I waited for the water to boil, I cut up some celery and bagged it with baby carrots. This is my go-to snack when I am craving something crunchy at work. I didn't have the ingredients to make a good paleo dip, so I will also be smothering these in almond butter. The last thing I did was steam the broccoli for a few minutes, until it was a beautiful bright green. When it was done, I added a little pepper and garlic. That's it. It took no time at all. And man am I glad I did this last night, because I DEVOURED the pancakes this morning. I can't wait to eat the rest of them tomorrow! Just remember: smother everything in almond butter. If you don't, you're stupid.

Paleo Lime Jerk Chicken Marinade

If you follow me on Instagram, you might have noticed all my pictures of Paleo Lime Jerk Chicken that I grilled up last night. I love having a grill! It makes meal prep so stinkin easy. Here is the recipe for the paleo friendly marinade. This is enough for 4 6oz chicken breasts. - 1 jalapeño pepper, de-seeded and chopped - 1/2 cup coconut aminos - 1 small yellow onion - 3 cloves garlic, crushed or minced - 1/2 cup coconut aminos - 1/2 cup apple cider vinegar - 1/3 cup olive or avocado oil - 2 Tbsp. thyme - 1 Tbsp. raw honey - 1/4 cup pineapple juice ( I have used Pineapple Mango before too) - Juice of 2 limes & rind of 1 - 1/2 tsp ground ginger - 1/2 tsp. ground nutmeg - 1/2 tsp. ground allspice - Salt & pepper *if you like it spicy, try adding more jalapeño and some red pepper flakes I put all of these ingredients in my food processor for only about 30 seconds, then threw it all in a gallon sized ziploc bag with my chicken. I let it sit in the fridge overnight and grilled the next day. YUM :)

http://instagram.com/p/noCmFVKs0M/ My new 1RM for back squas is 160 lbs! :) 6 weeks prior to this video, my max was only 125 lbs. I love being able to see the progress I have made in such a short time. I didn't get a video of it, but my 1RM deadlift also jumped from 135 lbs to 170 lbs.

I has been waaaaay too long since I have blogged on here! Here are some of the dishes I have made during my time away from tumblr. I have been Instagraming up a storm, which has kept me motivated. I also finally joined a Crossfit gym. So many of my Paleo friends were raving about it, so I tried it and fell in love. I usually go 5 times a week, and I am so happy with the progress I have made in 3 short months. Not only has my body changed, but I feel strong, energetic, and confident. Plus, I am making some really great new friends. Expect to see a lot more Crossfit related posts :)

Holy GNOCCHi! I can’t believe we found SWEET POTATO-WHOLE WHEAT gnocchi at Publix!! This meal was not completely paleo due to the whole wheat part, but it was still super clean and healthy for us! We had homemade tomato sauce with baked marinaded chicken over this amazing sweet-potato gnocchi. This was restaurant quality, folks. For real. This is the best thing I have eaten in a while. Yes, it was carb heavy, but worth it. Gnocchi for life.

Obviously we had leftovers. Looks like I’ll have two carb days. I guess I will just have to work out a little harder ;)

My morning in pictures :) I started with a nice run in this cold weather (cold to me since I am a true Florida girl--it's 55 degrees) with my hubby. It wasn't a long run, but I burned some extra calories jumping over some really ugly duckies. It felt great to get a run in before work! For breakfast I ate some Paleo Banana Bread that I made last night using the recipe from civilizedcavemancooking.com ( @civilizedcaveman ). It turned out well, but it would have been better if I actually put in the correct amount of bananas! Somehow I only used 2 bananas instead of 4 :( I guess that is what happens when you late night bake. Oh well, I'll probably just smear some fig preserves on the bread when I eat it tomorrow for some added sweetness. But I will DEFINITELY be making this again...the right way!

Sports Nutritionist Certification

I am super lucky to work for a company that allows me to better myself professionally. In 2011, they sent me to Las Vegas to take the certification exam for the CISSN -- Certified Sports Nutritionist from the International Society of Sports Nutrition (See more at: http://www.sportsnutritionsociety.org/CISSN.html#sthash.DDjCxw1u.dpuf).

With said certification, I am able to counsel athletes on nutrition and supplements. I have learned so much from the ISSN and continue to learn more. I took another exam online today to earn some CEU's and stay current, which I got 100% on by the way! It sort of makes me miss school :(

Taking the exam today also got me thinking about getting back to counseling athletes again. I got too busy last time I attempted this, but I think I can handle it now. Plus, with 3 more years of experience in the sports nutrition industry (I formulate for a major sports supplement company), I know I have a lot more to offer athletes and exercise enthusiasts.

Happy New Year!

I know it has been the new year for 2 weeks, but I have not blogged in a while! So happy new year! With everyone posting about their "New Year, New Me" healthy resolutions, it seems all I have been doing is looking at new, clean recipes and suggestions for new workouts.

My hubby and I have been running and eating a lot cleaner too :) Now if only I could cut out alcohol...

That's probably not happening.

So I haven't been on here in FOREVA so here's what's been going on in this crazy life! We moved and now have an amazing back porch with a GRILL--finally! So obviously we have become obsessed with grilling everything! Grilled asparagus is like candy to me 😍 I have also been spiralizing my sweet potatoes a lot, and my fave new recipe involves garlic powder, onion powder, and cinnamon for crispy sweet potato curls. I made a white chocolate pumpkin cheesecake with chocolate graham cracker crust for Thanksgivings (plural because we had two this year!). I got the base of the recipe from Cooking Light, but made it even lighter with less fat and by using stevia. I also added the pumpkin and white chocolate, which turned out awesome! We took our dogs to Key West to visit a great friend, now home from deployment. We had the best time and are so thankful for his return! And the best news of all: Penelope was born!! I'm the luckiest aunt eva! Now I have three gorgeous nieces to spoil! Girls rule 🎀💜
