Healthy Snickers Bar (Vegan)
Base • 1/2 cup creamy nut butter • 1 tsp vanilla extract • 1-2 tbsp honey or agave or maple (or stevia) • 1 tbsp oat or coconut flour
Caramel Nut Layer • 1/4 - 1/3 cup chopped nuts • 1/4 cup water • 10 soft dates or 1/4 cup agave or honey • 2 tbsp almond milk • 3-4 tbsp coconut milk. • 1 tsp vanilla extract • (optional) 1/2-1 tbsp coconut oil
Chocolate Layer: • 1 cup homemade chocolate or dark chocolate chunks • almond milk, to lighten.
Base —> combine the nut butter, vanilla extract, flour and sweetener together. Line a baking sheet with parchment paper and press the ‘dough’ onto it. Refrigerate for 1-2 hours.
Caramel Nut: —> Place all the ingredients in a blender. Save some of the coconut and almond milk. —> Blend on high until everything is mixed and creamy soft. You might need to scrape down sometimes. Taste and add more or use less of the ingredients before mixing again. —> When taste is fine and it’s all creamy, stir in the nuts.
Chocolate —> Melt the chocolate in a double boiler. Add the almond milk to it. At this point you might add coconut oil too. —> Alternatively. Make your own chocolate using 1 cup cocoa powder, 1/2 cup coconut oil and stevia/almond milk.
—> Once the base is set, take out of the fridge. Drizzle over the caramel nut sauce. Cut into bars and top with the chocolate. Refrigerate till set.
