Lunch time, who’s hungry?
“medical experts” have a lot of nerve acting surprised that rates of gestational diabetes are on the rise, when they are the ones to claim that pregnant women need a shit ton of carbs in their diet -- based on literally no research to back it up.
When I was growing up (gen x), my mom always made this classic 80s appetizer of sliced ham, spread with cream cheese, rolled around a pickle. Sounds terrible, but is yummy. When I introduce it to new ppl it inevitably makes them gag and then it always grows on people.
I am always on the search for fast high protein snacks, and it made me laugh when a similar something popped up suggesting swapping turkey for ham.
So I did. And I omitted the cream cheese, and you know what? It works!
(This would be much easier if my body would figure out its relationship to eggs.... but as of right now hard boiled eggs are still out....)

Chicken dinner and meal prep for tomorrow's lunches!
Brine the fresh or defrosted chicken breast in lukewarm salt water for 15 minutes, brush with melted butter, rub with your favorite seasonings (I used garlic salt, pepper, cayenne, and paprika) and cook at 450 until done to 165° F, (roughly 23 minutes) and then rest for at least 5 minutes.
It comes out soooo goood. Omg. Excited for lunch tomorrow!
When you can't decide between steak or chicken on your salad, why not have both? And get extra fancy with the sauces while you're at it!
