My Vegan Christmas Treat! Added almond extract to the icing - so delicious! Decided I'm going to make myself something yummy and naughty but still vegan for Christmas this year because I'm going to be by myself. Anyone made any good vegan holiday treats recently?
was going to do yoga but instead choosing to eat so delicious soymilk cookie dough ice cream and watch friends

I ran 5 miles today!!
5.29miles to be exact :) haven’t done that in two years. Some parts were power walking at 4mph, other parts were running at 6.6mph. 65 min in total so about a 12.29min/mile (4.88mph) average. Wasn’t planning on going the distance today, but two hotties hopped on either side of my treadmill towards the end and I couldn’t stop myself (literally).
Doesn’t matter where the motivation came from, I’m proud of myself - and still on that runners high 8 hours later :)
New favorite lunch - lettuce, spinach, chickpeas, black beans, yellow bell pepper, vegan "cheese", and salsa
My Healthy Root Soup! Ingredients: - 12oz frozen steam bag of broccoli, steamed in micro half way - 1/4 onion, diced - 1.5 russet potatoes, half inch cubes - 6 carrots, diced - 4 celery sticks, diced - 1 can(15.5oz) red kidney beans - 1/4 tsp cayenne pepper - oregano to taste - pepper to taste Directions: - cut up veggies and put in pot with beans - cover veggies and beans with water - simmer for 20-30min Probably could have added the beans in half way because they exploded from the heat. And it was a hugeee portion for one person so I'm currently chilling the soups to store in the fridge. Either way, it was delicious and I didn't even use any pre-made veggie broth!
Just watched Fed Up on Netflix
It basically focuses on the premise that sugar is more addictive than cocaine and because it's legal for all ages, it contributes to childhood obesity. They also show immorality of food corporations advertising to kids specifically. The babies who start drinking formula with added sugars and the kids who are influenced by ads on tv get addicted to sugar at an early age and don't even stand a chance. Looking back on my childhood, I'm glad my mother and grandparents were educated enough to start me off with a healthy childhood. I never watched tv (so no enticing food commercials) and never ate potato chips, juice boxes, or soda. My mother didn't give us money for school lunch, so I was spared in that way too (we ate power bars). I'm frustrated with the public school lunches shown in Fed Up because they literally serve Pizza Hut pizza, McDonalds burgers and fries to the kids. But even if parents can't change the good their kids get in school, you'd think they could make sure breakfast, snack, and dinner were healthy. There's a girl on the documentary who is obese at 12 - she is too young for weight watchers, so her parents decided that they could help her lose weight (mainly by increasing exercise, not cleaning up her diet). The mother buys low fat products etc. but there are shots of the girl eating Nutella (with the mother in the background!!) and burgers and fries. And the child is surprised and depressed by the fact that she hasn't lost any weight. Hopefully the obese children and their families interviewed in the documentary have actually watched it because as a vegan in my ealry 20s, I'm very removed from the world of children and of fast food, yet I'm saddened and frustrated by the whole thing. Ok rant over - I only have power over what I do. I am going to cut down on the zero calorie sodas I drink with alcohol and look more closely at the sugar content in my food.
Today’s workout
Woke up to the sounds of people cheering for marathon runners running down my street and decided this was the day I was going to get back into the gym. Got to the gym around 3:30 and all the treadmills were free - no competition, no stress :) Ended up doing 4.40 miles in 60min by alternating btw 3.5(rest level), 3.7(winding down level), 4.0(power walking level) and 5.5(running level). My first goal is to get to 5miles in 60min (something I used to do like 5x a week) Drove home blasting my music with the windows down and now on to some Sarah Beth Yoga :)

Got some fucking awesome yellow curry at Trader Joes today. Paired it with brown rice, half an avocado and baked tofu :)
Dinner: lemon dill tofu, black beans, avocado, carrots, corn, and green beans. About 300cal.
So this morning I did two SarahBeth yoga videos - Monday Morning Vinyasa Yoga Routine and Wednesday Power Yoga Workout. The Monday video was nice and smooth because I did it yesterday - I think I'll try to do this video every morning because it has the sun salutation variations that I like. I was feeling so confident that I moved on to the power yoga video (Wednesday), and boy did that confidence disappear. My sore shoulder was screaming and my muscles were shaking. I tried to keep up with her pace (especially with the airplane/Warrior I) and thankfully she had easier variations to follow. I finished with a long, well-deserved shavasana.
Just did two Sarah Beth yoga videos: Monday Morning Vinyasa Yoga Routine, and Tuesday Heart Opening Hatha Yoga Routine (even though it's Thursday). Loved it. She doesn't talk a lot - just directions for body placement, so I did most of it with my eyes closed and listening to my "slow&sweet" playlist on Spotify. Both videos were 15min each, so I burnt 76 calories!
Sandwich with roasted tomato and basil hummus, veggie pepper jack "cheese", cucumber, and avocado.
